The industry was established by the Pennsylvania Dutch, but, as time passed, Italian and Latinx immigrants started to take over the operations. Meet commercial mushroom producers who have been growing the beloved fungi for generations, go into the surrounding wilderness to forge for morels and learn how the locals prepare mushrooms in a variety of ways...including in ice cream.
